Sometimes you just need chicken
Sometimes you just need chicken..... These bone-in chicken thighs had a dusting of Country Wood Smoke's House Rub & were cooked indirect on the Weber 57cm.  I do cook on something other than my Kamado Joes sometimes... honest guv!  Actually I wanted to try out my new accessory - some charcoal dividers to replace my rusted out charcoal rails.  Big K BCH15 was placed either side in the dividers with a water pan direcly under the middle for the chicken juices to fall into.  During the final 10 minutes or so the thighs were glazed with a mixture of apricot jam, olive oil & lemon juice.  Utter simplicity & utterly delicious......
